Born and raised in upstate New York, Chef Patrick Phillips developed a passion for cooking early on, spending countless hours in the kitchen with his mother and grandmother. His culinary journey began with managing an Italian restaurant and pizzeria in his hometown, where he cultivated a deep appreciation for traditional flavors and techniques.

In 2014, Patrick made a bold move across the country to Colorado, where he took on the role of sous chef at Blue Stag Saloon in Breckenridge. His talent and dedication quickly earned him a promotion to executive chef, a position that allowed him to lead the opening of a new restaurant for the company, Bold. There, he delighted diners with creative takes on breakfast, lunch, and dinner classics, establishing himself as a culinary force in the area.

In 2021, Patrick and his wife Hannah decided to relocate to South Carolina to be closer to family. Since early 2022, he has been dedicating his expertise and passion to Initial Q in Spartanburg, a sister restaurant where his influence continues to be felt through his commitment to quality and innovation. Chef Patrick and Hannah welcomed their first baby girl, Peyton in September 2024.

Chef Patrick’s journey is a testament to his dedication, creativity, and love for the culinary arts, which he continues to share with every dish he creates.

Enter Ashe Macfie, Draper's bar manager and cocktail wizard!

A Greenville native, Ashe got his start bartending in 2022 at the Spirit and Bower Greenville inside the Grand Bohemian Lodge. First hired as a barback, he was quickly promoted to bartender and then lead bartender within his first six months. In 2023, Grand Bohemian Lodge named him employee of the year, recognizing his passion and creativity in his craft.

Growing up in Greenville, Ashe was a frequent customer at Barley's, the pizzeria and taproom that stood where Draper is now, and the place held great meaning for him. After we announced our opening in 2024, Ashe quickly applied to work for us as a server, just to be in the building he loved so much. After recognizing his skill and talent as a bartender, our owners hired him as our bar manager instead of a server.

In 2024, Ashe competed in the Six and Twenty Old Fashioned Competition, placing as runner up. In 2025, he competed in the Hendrick's Gin Oasium competition and took home the gold with his signature London Sling.

His favorite cocktail? The Last Word, a prohibition-era cocktail made with gin, maraschino liqueur, green chartreuse, and fresh lime juice.
